Mediterranean Chicken Salad Wraps

I made these wraps using a Cooking Light recipe yesterday, and I think they turned out really well. We ended up eating two wraps each (2 servings), but our wraps were lower in fat and calories than those Cooking Light seemed to be using. Even if they weren't, the two wraps turned out to be quite filling (neither of us had snacks later), and they only had about 500 calories. It turns out if you eat 2 servings like we did, you fulfill the FDA's guidelines for fiber intake!

Ingredients
2 cooked, chopped boneless skinless chicken breasts
1/2 cup chopped roasted red peppers
1/4 cup light Caesar dressing (such as Ken's)
6 cups romaine lettuce, chopped
4 whole-wheat or multigrain wraps
Roasted-garlic hummus

Instructions
Combine first four ingredients, mixing well. Spread 2 tablespoons of hummus on each wrap. Add 1/4 of lettuce mixture. Wrap up. Eat.
